Simply Sexy Chicken Breasts

Ingredients

Brine
4 cups warm water
¼ cup kosher salt
1 teaspoon black peppercorns
½ teaspoon red pepper flakes
1 bay leaf

Chicken

4 boneless skinless chicken breasts
1 cup of your favorite barbecue sauce (I use Trader Joe’s Kansas City Barbecue Sauce)
6 slices cooked bacon
1 large onion sliced
1 cup sliced mushrooms
1 tablespoon vegetable oil
4 ounces sharp cheddar cheese, sliced

Directions

Put all brine ingredients in a shallow baking dish and stir until salt is dissolved. Add chicken breasts and cover the dish with plastic wrap. Place the dish in the refrigerator and let the chicken  brine for 30 minutes up to 2 hours.

While the chicken is brining, heat the vegetable oil over medium-high heat in a saute pan. Once the oil starts to shimmer, sauté onions and mushrooms until they start to brown, about 10 minutes. Remove from heat.

Preheat oven to 350°

Remove chicken breasts from the brine and pat dry. Place them in a shallow baking dish. Brush both sides with barbecue sauce. Top each chicken breast with two slices of bacon (criss-crossed), sautéed onions and mushrooms, and then the cheddar cheese. Bake at 350° until cooked through—about 30-40 minutes.
