This recipe was inspired by Alton Brown’s baby back rib recipe. The rub actually makes more than one recipe. Just store it in an airtight container for the next time.
Chipotle-Rubbed Pork Loin
Rub
2 tablespoons brown sugar
2 teaspoons kosher salt
½ teaspoon Old Bay
1 tablespoon chipotle powder
½ teaspoon onion powder
½ teaspoon cayenne pepper
1 tablespoon chili powder
½ teaspoon cumin
1 pork loin trimmed of fat
Non-stick spray
Preheat oven to 350°
Mix rub ingredients. Spray a roasting pan with non-stick spray. Coat the pork loin on all sides with the rub. Place the pork loin in the oven and roast until the internal temperature reads 140° – about an hour to an hour and 15 minutes.
Remove the roast from the pan to a cutting board. Loosely cover the roast with aluminum foil and allow it to rest for 15 minutes before slicing.
Slice. Serve. Enjoy!
