As a rule, I always keep a bottle of sparkling wine in the fridge. It’s a great way to take the edge of a bad day or to top off a good day. The store was out of my favorite cava so the wine associate suggested Finca Flichman Extra Brut.
I figured that winning a free lobster was as good a reason as any to pop this sparkler open. 80% Chardonnay and 20% Malbec, this bubbly wine is a light salmon pink. This wine is dry with notes of apple and yeast that keeps the palate interested. It was the perfect foil for the rich lobster with melted butter. Finca Flichman Extra Brut is going to be my go-to sparkling wine this summer.
